Visited by Portuguese and tourists, ambassador and defender of Alentejo cuisine around the world, it was founded in 1945 by Manuel Fialho and has become a world reference when it comes to “awakening the senses” by Portuguese cuisine, namely Alentejo. Located in the historic center of Évora, considered a World Heritage Site by UNESCO in 1986, O Fialho remains under the command of the firstborn, Amor Fialho, who does the honors of the house and his recipe is supervised by the third generation of the family, Helena and Rui Fialho. Over the course of seven decades, the Fialho family has dedicated itself to the art of welcoming and the good Alentejo way, values the good and genuine regional cuisine and excellent wine cellar. The Fialho restaurant works with respect to raw materials, valuing the authentic flavors of the Alentejo.
In a cuisine of flavors and knowledge, tradition and respect for what the land gives us are the watchwords. With extreme attention and care in the products used and in the regional dishes, we can speak of emblematic dishes such as the Black pork cheeks in red wine or the fabulous Partridge à Convento da Cartuxa. The perfect harmony between the genuine flavors of Alentejo and the knowledge of our team gives rise to a journey of gastronomic excellence. This trip led the restaurant to establish itself as the most awarded restaurant in the region, where the Golden Fork Boa cama Boa mesa from the Expresso newspaper stands out, won since the initiative existed. His Medal of Merit from the city of Évora is cited by several national and international guides recognizing the restaurant as a mandatory stop. Still this year, the Fialho restaurant won the Tripadvisor Certificate of Excellence, thus confirming that it is a restaurant that appeals to the most diverse audiences.
The main dishes include the Cent de coriander, the Medallions of black pork, the Pigeon Rice or the Partridge à Convento da Cartuxa. Finally, save space for several Conventual desserts, such as the Encharcada de Mourão and the Torrão Real de Évora, but the Queijadas and Tecolameco are also a must. The long and well-filled wine list, together with the delicacies of the house, make it one of the best and most gastronomic experiences in Portugal.
