peel and coarsely chop the onions. brown them in melted butter in a large stew pot. cut the meat and the heart into cubes, add the onions and let them saute, stirring constantly.
crush the garlic with the cumin and salt. remove the pot from the heat and add this mixture of spices while stirring. then pour 2 liters of water to cover everything. Let it cook over medium heat for approximately 60 minutes.
peel, gin and finely chop the tomato. wash the peppers, remove the seeds and cut them into strips. peel the potatoes and dice them.
add to the meat, the tomato and the peppers. If all the broth has been consumed, add more water, salt and cook for another 30 minutes.
then add the potatoes and bring to a boil all together. season to taste with hot pink paprika. serve in deep soup plates.
