Fariña (Flour) is an indispensable food for the natives that is prepared with chive or mingao de fariña. the yucca is plucked, the seeds are removed and left in water for three days. This process is called maturing the cassava.
There are two ways to prepare the fariña: the grated yucca dough is mixed with ripe yucca, or only the ripe yucca is used that is put in the matafrío, it is squeezed to form a dough that hovers and then is added to the hot pot, mixing it constantly to avoid burning and letting it cook to a dry, grainy texture.
