clean the salmon, removing the skin and pimples. cut into pieces of about 3 cm. season with salt and grated onion. Reserve. in a frying pan put 2 tablespoons of butter, bacon and finely chopped onion. sauté. add the pieces of fish and fry for 2 to 3 minutes. sprinkle with paprika and wheat flour over the salmon. let it toast for 2 minutes. add white wine and cream and simmer for 5 minutes. carefully remove the fish pieces and reduce the sauce, letting it boil for another 5 minutes. add the remaining butter. arrange the salmon in the center of a dish, sprinkle with sauce and garnish with potatoes.

peel the potatoes, and take pieces in the form of balls (there is a spoon suitable for this), the size of nuts. cook in salted water, without letting it melt. drain and sprinkle with melted butter.
