Preparation
wash, trim and chop the green beans throughout. cook them in boiling salted water, then drain.
beat the eggs, add the sifted flour, stir, mixing well. Incorporate the beans already drained and cold, the peppers, the onion and the carrot, stir well. then add the salt, pepper, a little oregano and cumin.
in a frying pan heat three tablespoons of oil. put a little mixture so that the pan is covered but the layer is thin. cover the pan with a pot lid and wait for the tortilla to brown first on one side and then turn it over. Once the tortilla is golden on both sides, remove it and continue with the mixture, making tortillas until finished. it can be served as an accompaniment to golden potatoes with tomato slices.

- 1 kg. green beans
- 3 eggs
- 4 tablespoons of flour
- ¼ cup finely chopped red bell pepper
- ¼ cup finely chopped green bell pepper
- ½ cup diced onion
- 1 large carrot, grated
- cumin, oregano (optional) salt and pepper to taste.
- oil for frying
