Preparation

After the duck is cleaned and washed, it is cut into very small pieces. Season with the cut ginger, 1 tablespoon of oil, salt and the crushed garlic. It remains in this seasoning to taste for about 1 hour.
Bring the wok (the wok is a large pan with a concave bottom) to the heat with the remaining oil (2 tablespoons) and the chopped onion to fry over a high heat, always stirring the wok.
Put the duck meat, soy sauce and potato starch where it dissolved in a little water.
Let it cook by stirring the wok for about 3 minutes.
Lettuce leaves are well washed and dried on a platter. In another the meat.
To taste, remove a little duck and roll it in a lettuce leaf.
