Preparation
Wash the tripe and the guts thoroughly, scraping and scalding them. Then let them stay with lemon and salt for a few hours.
Season the tripe and tripe with salt, paprika and chilli. Inside each piece of tripe, place pieces of tripe and bacon and a mint leaf, making some bundles that you tie or sew with a thick thread afterwards.
Place the blackfish in a clay pot, together with the chopped onion, the broken bay leaves, the oil, the red wine, the water, the garlic cloves, salt and pepper.
Cover and cook in the oven for 3 hours.
Serve with boiled potatoes and / or vegetables.
