Preparation

1. Clean and wash the octopus. Place it in a pressure cooker with water seasoned with a sprig of parsley and an onion with peel, and let it cook for about 35 minutes. Remove it to a plate and cut it into four parts. Reserve.
2. Wash the unpeeled potatoes very well. Place the unpeeled potatoes in a pan with water seasoned with a little salt and cook. When they are cooked, place them on a plate.
3. Place the octopus and potatoes on an oven tray. Season with crushed unpeeled garlic and a bay leaf. Drizzle with olive oil and bake in the preheated oven at 180ºC for about 30 to 35 minutes. From time to time drizzle with the sauce itself.
4. Turn off the oven and sprinkle with chopped coriander.
