turn the oven to 180º. line a round pan with parchment paper and set aside.

mix the egg yolks with the egg whites and sugar and whisk until thick and voluminous. add the flour gradually and stir with a wooden spoon, from bottom to top, and mix well.

pour the dough into the pan, already lined with parchment paper, and bake for 30 minutes.

note: if, when shaking the shape, you feel that the dough inside is not yet fully cooked, do not worry, because after cold, it will not be as moist as it looks. the sponge cake should have a thin layer of soft eggs that will give you an irresistible taste.
