Preparation
After cleaning, singe the partridge and then wash very well.
Put a pot of boiling water and when it boils add the partridges, the ham and the peeled whole onion.
Cook over low heat until the partridge is tender.
Remove the partridge and strain the broth with a strainer.
Bring the broth to the heat again and when it boils add the rice.
Check the salt and let it cook for another 10 minutes over low heat.
Meanwhile shred the partridge and serve the rice by adding the shredded partridge and the mint leaves
