Preparation
Beat the egg whites until they are stiff, but not too firm (forming smooth peaks).
Then add the sugar and beat a little more with an electric mixer. Add the vinegar, cornstarch and vanilla extract and carefully wrap with a wooden spoon.
Line a baking tray with parchment paper. With the help of a plate draw a circle on the parchment paper and on the circle arrange the mixture of egg whites to form a disc.
Take it to a hot oven (180ºC). As soon as you put the egg whites mixture in the oven, set it to 150ºC and cook for about 30 minutes. Turn the oven off and leave the egg whites mixture in the oven.
Remove only when they are cold.
After cold place the Pavlova on the serving plate, inverting it on the plate.
Whip the cream with the powdered sugar until it is whipped and put on the egg whites.
Decorate with the passion fruit pulp, or any other fruit to your liking.

- 4 egg whites
- 16 tablespoons of sugar (4 spoons for each white)
- 1 teaspoon white wine vinegar
- 2 teaspoons of corn starch (Maisena)
- 1 teaspoon of vanilla extract
- 200ml of fresh cream
- 2 tablespoons powdered sugar
- 8 passion fruit
