Preparation
After the potatoes have been peeled and washed, they are cooked whole in water seasoned with salt. After cooked and cold, they are cut into squares.
In a saucepan, it takes to the fire with the oil, the onions and chopped garlic. Let it sauté a little, add the potatoes, cumin, curry, crushed mustard and chopped green chilli.
Mix well and let it cook for about 2 minutes. Remove from heat and set aside.
Meanwhile prepare the dough. Mix the flour with the lard and mix well with your fingertips. Add the warm water mixed with the salt, little by little kneading well. Form a ball with the dough, and let it rest, covered, for about 30 minutes.
Then it extends with the roller until it is very thin. Slices are cut with a glass or other utensil and fried on both sides in a greased grease pan.
After all the fries, a tablespoon of the potato mixture is placed on top of each slice, covering with another slice.

- 4 tablespoons of olive oil
- 1 teaspoon full of curry
- 1 small onion
- salt q.s.
- green hot chilli q.s.
- 2 garlic cloves
- 1 teaspoon of mustard seed
- 370 grs. of potatoes
- 1 pinch of powdered cumin
- For mass:
- 30 gr of lard
- 180 gr of wheat flour
- 1 dl of water
- salt q.s.
