Preparation

the meat is cooked in a pot with water and chopped onion for 20 minutes. then garlic, pepper, cumin, salt, oregano and thyme are added. The bananas are cut into logs and fried in oil. Potatoes, duly peeled and chopped tortillas, and fried plantain toasts are added to the broth. let it boil for 10 minutes after which the meat is removed, shredded and returned to the broth. served hot sprinkled with chopped parsley.

  • 2 pounds of beef (pork or chicken)
  • 2 green bananas
  • 4 long onion stalks
  • ½ teaspoon pepper
  • ½ teaspoon saffron
  • 10 white tortillas
  • 6 Creole potatoes
  • 3 garlic
  • parsley, oregano and thyme
  • ½ teaspoon cumin
  • salt to taste
