Preparation

Wash and cook the artichokes. Then, remove the hairs from the artichokes and sauté in the butter. Stuff the artichokes with the fatty meat sautéed in butter and seasoned with salt, sweet pepper and pine nuts. Add to the artichokes a little warm water and the juice of the sour orange. Leave to simmer until the liquid is dry.
