Preparation

You have to soak the beans in cold water overnight. The next day they are drained, and the beans and the other ingredients (the onion cut into quarters, the whole garlic cloves, the oil, the pig's ear and the tail or leg) are placed in a large casserole. Add the paprika, stir a few times and add the ham and chorizo, and after a while, the bacon and blood sausage. After the first boil, foam well and cook slowly for 2 or 3 hours, ensuring that the beans are always covered with water; if needed, cold water is added in small amounts from time to time.
