Preparation

Cut the Baby goat into medium pieces and marinate in water with 2 tablespoons of vinegar for 1 hour.
Wash well so you don't have so much fat and the like.

Sauté with olive oil, onion, garlic and tomatoes, sauté for 15 minutes, add the kid with the bay leaf, wine, pepper, mustard.
Cover the pan and let all the water dry.
Add the butter and let it fry until very golden.
Add a cup of water and simmer.
Gradually add more water until ready, if necessary.
You should have a little broth.
