Preparation

Wash the mocotó under running water. In a bowl, scald the mocotó with boiling water and a little lemon or white vinegar for a few minutes, drain and repeat the process again.
Take a pressure cooker over medium heat, fry the bacon, when it is already golden brown add the mocotó, saute until colored, add all the spices and salt, saute for another 15 minutes, stirring constantly.
When the mocotó is already well sautéed with the spices, add water until the whole mocotó is covered. Cover the pan and cook for about 25 to 30 minutes. Open the pan, see if it is well cooked, if not, cook a little more, until it is well cooked, very soft.
When in the ideal cooking, add the cooked beans, but drain some of the cooking water, add a little more boiling water, and continue cooking with the pan uncapped, after 10 minutes, add pepperoni sausage, and cook for another 10 minutes or until the broth thickens.
Put the cilantro or parsley and mix everything.
Serve it hot!
