Preparation

line an English cake pan with a plastic sheet that overflows the edge. put the ice cream, squeezing in the pan and smoothing well with a wet spoon. take to the freezer until very hard. remove and put the chocolate ice cream, smoothing well. return to the freezer to harden. beat the egg white on a firm snow with the sugar and mix it with the whipped cream and candied fruits. remove the ice cream from the freezer and put this whipped cream. take to the freezer and leave for 6 hours. when serving, pass a wet knife into the pan to loosen the cassata. gently remove the plastic sheet and serve in slices.
