Preparation

remove the thick outer leaves and the fibrous part of the artichokes. cut the bottom into slices and sprinkle with lemon juice. pass in the wheat flour and sauté quickly in the oil and butter. place in a refractory dish and cover with beaten eggs mixed with milk, salt and pepper. bake for 15 minutes.
