Preparation

beat the cream cheese adding the evaporated milk little by little. then add the condensed milk, then the eggs two by two, the sugar, the salt and the vanilla. beat until everything is well united.
caramel: place the sugar and water in a saucepan over moderate heat until the preparation is caramelized. pour into the mold in which you will make the flan.

When the caramel has cooled down a little, pour the flan mixture half way into the mold.

Cover with aluminum foil and put in the pressure cooker or oven in a water bath. cook over high heat at the beginning and then lower over moderate heat for about 20 minutes. Turn off the fire and let repose.

when removing it, let it rest for half an hour. then turn, removing the mold, preventing it from breaking.

  • 8 oz. cream cheese
  • a can of condensed milk
  • a can of evaporated milk
  • a cup of sugar
  • 6 eggs
  • 1 tsp. vanilla
  • a pinch of salt
