Preparation

Preheat the oven to 200ºc. Grease a platter with butter.

In a saucepan, bring the milk, lemon peel and cinnamon stick to a boil and bring to a boil for about 5 minutes. Remove and let cool.

In a large bowl, mix the egg yolks with the sugar and flour.

Without stopping stirring, add the cold milk, previously strained.

Beat the egg whites with a pinch of salt and wrap them in the previous preparation.

Place the dough on the platter and sprinkle with plenty of cinnamon.

Put the sericaia in the oven for about 12 to 15 minutes (check cooking with a toothpick).

Remove from oven, let cool and refrigerate until ready to serve.
