Preparation

peel and chop chayotes into fine squares, cut corn kernels with a knife. Sauté in a pot over medium heat, butter, oil and achiote, onion, garlic, and sweet chili, the corn kernels. cover, and when almost softening, add chopped chayote, salt, pepper and consommé, cover and lower the heat until smooth.
