"Skink" is an old Scottish word that means soup or broth. Cullen is a town near Seatown.
place the fish in a large saucepan. Peel and chop the onion and place it in the saucepan with the salt, pepper and water. Bring to a boil, cover and simmer for 20 minutes.
peel and boil the potatoes and mash them well. strain the fish and save the liquid. remove skin and thorns.
Strain the liquid and place it in the saucepan with the potatoes. add the milk, butter and fish. Bring to a boil, cover and simmer for 5 minutes.
garnish each dish with a tablespoon of cream and a little parsley.
