Preparation
1. Season the dogfish with salt, lemon juice, a little pepper and coriander. Leave to marinate for about 30 minutes.
2. Place the peeled potatoes, the sliced onions, the sliced pepper, the chopped garlic, the bay leaf and the peeled tomatoes in pieces on a clay tray. Drizzle everything with oil, water and white wine, season with a little pepper and put it in the preheated oven at 180ºC for about an hour.
3. After an hour, remove the clay tray from the oven for a moment, add the dogfish sprinkled with a little more coriander and return it to the oven for about 25 minutes.
4. Turn off the oven, let it stand for about five minutes and serve.

- - 100 ml of water
- - 250 ml of white wine
- - 100 ml of olive oil
- - Juice of a lemon
- - 1 coriander sauce
- - Salt (to taste)
