Preparation

In a saucepan, make the caramel by adding sugar with little water and bring to a boil.

Wait for the caramel to turn a light yellow color and gradually add the orange juice.
Let it halve and add the liquid or diced fish stock. Let it reduce again and add salt to taste.

Mix the sauce in a blender and start cooking again until you get a thicker sauce consistency.

Season the four fish fillets with salt and pepper.

Place a pan on the fire to heat and add a drizzle of olive oil and grill the fish on both sides.

Turn off the heat, cover the pan and let the fish finish cooking.

Serve the fish and add the sauce on top. Enjoy your food!
