Preparation

Make a syrup by diluting the sugar in the hot water and add the peeled and ground almonds, the cinnamon and the lemon zest.
Put it on a low heat, stirring without stopping, until it is very thick and let it cool.
When it is cold we add the beaten yolks, without stopping to stir, and place it again on the fire until it boils.
At the time of serving, we place two scoops of ice cream of the desired flavors on a plate and pour over the cold bienmesabe.

  • ¾ Kg. Of sugar
  • 3 egg yolks
  • ½ liter of water
  • ground cinnamon
  • grated green lemon
