Preparation
This recipe was taught to me by a fisherman from Fuseta.
Open the oysters in the microwave or oven.
Remove the brains and set aside
Also reserve the bark
In a bowl, mix the mayonnaise, the finely chopped garlic, the finely chopped coriander, the juice of half a lemon and the salt to taste.
Then add the oysters' brains to the sauce and mix well.
Return the brains to the shells wrapped in the sauce and bake for 5 minutes to brown.
