clean the fish, wash it, dry it and cut it into wide slices. pass them through flour and fry them in a frying pan with oil until golden brown. place oil in a deep frying pan, add the onion, julienned carrots and cook until tender. add the bay leaf, the cloves, the peppercorns, the fried fish, season and bathe with the vinegar. if necessary, add a little broth or oil and complete the cooking. add the lemon and let cool before serving.
