Preparation

step 1: clean the partridges and singe over the fire.
Season with salt and pepper.

step 2: Fry the partridges in oil.

step 3: in the same oil, sauté garlic, bay leaves, thyme, pepper, wine, vinegar, water and salt.

step 4: add the partridges, cover and cook.

  • 1 head of garlic
  • 3 bay leaves
  • 1 bunch of thyme
  • 2 dl. White wine
  • 6 dl. wine vinegar
  • 2 dl. virgin olive oil
  • 2 dl. of water
  • pepper
  • Chili
  • salt
