Preparation

wash the pork leg with cold water and vinegar, let it drain and make small holes with the tip of a knife all over the skin.

add the orange or lemon sumo. grind the garlic and mix with the salt and oregano.

spread the pork leg with the mixture and let it rest in this mojo for 12 to 24 hours.

heat the oven to 350 degrees and cook for 4 to 5 hours, until the skin is crisp.
