Preparation
Add lentils and water in a large stock pot. Slowly bring to a boil, stirring frequently. Keep heat on Medium and stir frequently (lentils will stick and scorch!). Simmer for approximately 15 minutes, stirring occasionally. Salt and pepper to taste. Garnish with dab of sour cream and splash of red wine.
Ingredients
- 2 cups red lentils
- 2 cups green lentils (some yellow split peas are OK)
- 4 quarts water
- 1/2 tsp. rosemary
- 1 tsp. thyme
- 1 large onion, chopped
- 2 green peppers, chopped
- 4 tomatoes, blanched, skinned and chopped
- 2 large carrots, diced thinly
- 1 clove garlic (optional, but highly recommended)
- salt and pepper to taste
