fruit sauce
place in a small saucepan sugar and orange juice.
mix until the sugar crystals dissolve. incorporate the fruits cook until it boils. let cool. Reserve.

mousse
Chop the white chocolate and place in a pan in a double boiler. add part of the liquid cream and let it melt over low heat. Reserve.
place the sugar and water in a saucepan and bring to a ball.
Place the egg yolks in a bowl and add the syrup in the form of a string and beat with an electric mixer until the preparation takes on a soft color and is well foamy.
place the melted and cold chocolate in a bowl, add the cooked yolks and mix to integrate, add the gelatin hydrated in water.
incorporate the remaining milk cream, beaten to medium point and integrate gently.
add the Italian meringue and mix in an enveloping way.
