Preparation

soak the clams in water with plenty of salt, and wash them in various waters to release the sand. bring the oil to the heat and, when it is hot, add the garlic to brown. introduce the clams and chopped coriander, season with salt and pepper and stir occasionally. when all the clams are open, drizzle them with the juice of half a lemon. serve with the remaining lemon cut into quarters.
