Preparation

Put a saucepan over low heat and add about 3 tablespoons of butter. Let it sit until it is completely melted.

Once the butter is melted, add a couple of tablespoons of flour. Mix it well, don't stop stirring and don't stop until a paste is made. There can be no lumps.

Add half a glass of white wine to the mixture. Keep stirring so that no lumps form. If it is very caked, add more white wine, until you see that it takes the right consistency.

Finish by adding salt while stirring and let the mixture always cook over very low heat.
