Preparation

Start by washing the snails thoroughly under running, abundant water to remove all impurities. For this process, water with a little vinegar can be added to help clean.

Then, add the oregano, the peeled garlic cloves, the bay leaves, the lemon, the broth and a little pennyroyal if you like.

Then add the snails and cover with water. Bring to a low heat, and when it starts to boil put the heat to the maximum and add salt (About 2 hands full of salt).

Boil for about half an hour. Serve it hot.
