Preparation
This recipe is typical of the northern region of Portugal, more precisely, the Minho region.
To start making this dish, make sure that the cod slices are pre-salted and soaked.
Add the cod slices to the flour.
In a frying pan, fry the cod slices until golden, drain the oil well as soon as you take them out of the frying pan.
On the stove, take another pan and sauté in olive oil, onion, garlic, peppers and bay leaves. Add a pinch of salt.
Add white wine after a few minutes of sautéing and let it cook for a few more minutes.
On a platter, add a half of the sauté, spread well and add the sprigs of parsley and the cod, and add the other half of the sauté on top.
Take to a preheated oven at 180º for 10 minutes.
And then fry the potatoes, if possible, in the same oil, until crispy.
Remove the potatoes, drain the excess oil and place them around the cod.
Return the dish to the oven for another 5 minutes.
After that time, remove and add olives and chopped parsley.
Serve this delicacy very warm and have a good appetite!

- 500 gr of soaked codfish (approx. 2 slices of cod)
- 700g sliced potatoes
- 120g Bell Peppers
- 1 Onion cut to half moon
- 4 chopped garlic cloves
- Black olives q.s.
- 2 branches of parsley
- 2 bay leaves
- 30ml White wine
- 300ml Frying oil
- White pepper
- Fine salt
- 150ml olive oil
- 40gr Wheat flour
