Preparation
put the onion in boiling water for 30 seconds, remove, drain and set aside.
quickly cook the cod loins (already desalted) in boiling water for about 5 minutes.
in a large skillet or plate, heat some of the oil and ´´grill´´ the cod loins, always starting at the side of the skin, until they are well browned.
arrange on a platter, arranging potatoes, onions, green beans, broccoli, boiled eggs and black olives around the loins.
drizzle with a lot of extra virgin olive oil.
