It is the typical dessert of the Kings Day meal. Whoever finds the surprise will be crowned king of the house and whoever catches the beans will be punished with the payment of the roscón.

In a bowl, dissolve the yeast in 3-4 tablespoons of warm milk, add a quarter of the flour and mix well until you get a ball of soft dough.
Let it rest, covered and in a warm place, until the dough rises to double in volume (approximately 2 hours).
Put the rest of the flour in another bowl, make a hole in the center and put 3 of the eggs, the sugar, the rest of the milk, the orange blossom water and the lemon zest. work well with your hands, kneading until you get a thin, hard dough.
then add the butter and continue kneading until incorporated into the dough.
then, incorporate the soft yeast dough and knead well until everything is well mixed. Sprinkle with flour and let it rest, covered and in a warm place for 2 hours.
After this time, knead again and on the previously floured baking sheet, place the dough ball, smooth and shape it into a string, with a central hole about 5 centimeters in diameter. the beans and the surprise doll are introduced. It is decorated with strips of candied fruit and cherries and with a brush is painted on the top with beaten egg. Sprinkle with sugar, place in a preheated oven at 160º and cook for 15-20 minutes.
