Preparation

Peel the papaya wash it and cut it in thin slices after the seeds have been removed.
In a saucepan, place the papaya slices, the sugar, the zest of half a lemon and 2 glasses of water.
Bring to the boil, stir a little at first to make the sugar dissolve evenly, and then let it boil until it is consistent.
Remove, let cool and store in pots.
Serve with toast, bread or crackers.
