peel the prawns and remove the intestinal thread
Chop half and mash the other half by mixing both parts in a bowl.
put the noodles and cover with hot water, leave them 1 min.
drain and cut into several pieces.
beat an egg together with the fish sauce and water.
Sift and make a hole in the center of the flour and pour in the beaten egg mixture little by little and stirring until you create a fine paste.
Add the prawn mixture, the chilli, the chives and the noodles and mix everything.
heat the oil in a saucepan, adding tablespoons of the mixture and fry for 3 minutes until the fritters are crisp
drain on kitchen paper
serve with the sweet chilli sauce

- 2 liters. of water
- 1 tablespoon fish sauce

- 2 scallions cut into slices
- 1 red chilli, chopped
- oil for frying
