Preparation
Season the fish with salt, pepper and half a lemon. Reserve.
In a frying pan place the oil and bring to high heat. Seal all sides of the fish until golden brown.
Preheat the oven to 210 degrees on a greased baking sheet for 10 minutes. Put the fillets in the oven. Remove, turn the fillets and return to the oven for another 10 minutes.
To make the butter:
With the help of a tamper, crush the herbs with the salt.
Add the lemon and butter and mix well.
Put the mixture on a film paper, roll it up, and freeze it until it hardens.
To serve, cut slices of butter and place over the fish.
Serve hot and have a good appetite.
