Preparation
Cut the fish into medium pieces and soak it in water for about three hours before preparing it. heat the oil and fry the achiote until the oil turns slightly red, then add the diced onion with the ground garlic. with the golden dressing add the necessary water, the dried fish, the yuccas in pieces and leave to cook. once cooked add the cassava flour or starch, wait for it to boil, stirring constantly. This preparation is accompanied by a cocona sauce with chili pepper.
