Preparation

coat the sole with cornmeal, salt, pepper and fry for five minutes in plenty of hot oil. Then, brown the garlic with pepper to taste, the paprika, cumin to taste and the onions cut lengthwise in another pan. sauté everything with a little white wine and a pinch of vinegar. once the onions are crispy, bathe the fried sole with this sauce, sprinkle chopped parsley and garnish with lettuce. serve with white rice.
