Preparation
Wash the rib and put it to boil with garlic, salt and a piece of onion for an hour, then add the soaked and washed beans, let it boil until soft. Re-fry with onion, tomato, garlic, coriander, achiote and the dressings. Add all this to the broth with the potatoes and boil until the broth thickens.
Ingredients
- 1 pound of beef rib
- 1/2 pound of panamito beans soaked overnight
- 2 garlic cloves, crushed
- 1 tbsp achiote
- 1 onion chopped
- 1 tbsp white onion, minced
- 1 tbsp chopped cilantro
- 2 red tomatoes, chopped
- 2 pounds chopped potato
- 6 cups of water
- Salt, pepper, cumin to taste
