Preparation

Clean and fix the partridge, cut it into pieces.

Dip the meat in the flour and fry it.

In a saucepan, place the wine, oil, spices and the bouquet of smells, until boiling. Add the fried partridge and let it stew.

In the middle of cooking, add the onion cut in half and the slices of carrot.

Cook until the meat is tender and let the sauce cook.

Accompany this dish with rice and sprinkle with chopped parsley. Enjoy your food!

  • 80ml of olive oil
  • 0.5l of white wine
  • 1 clove
  • peppercorns q.s.
  • 2 cloves of garlic q.s.
  • 1 bay leaf
  • 1 branch of smells
  • 16ml of vinegar
  • 1 medium onion
  • 1/2 carrot slices
  • salt
  • flour q.s.
