Preparation

Peel the onion and garlic cloves and chop them. Bring a pan to the heat with the oil, let it warm, add the onion, the garlic, the bay leaf and the cloves and let it saute until the onion is tender.

Add the pork cheeks, cook until golden brown on both sides, add the tomato pulp, paprika and red wine and season with salt and pepper. Cook over low heat and add water gradually if necessary for 50 minutes or until the meat is tender.

Rectify the seasonings, remove from heat and serve sprinkled with chopped chives and accompanied with boiled potatoes.
