Preparation

In a pressure cooker, put the rooster or chicken cut into pieces to cook for 10 minutes after lifting pressure.

Remove the rooster and the cooking water and set aside.

In the same pressure cooker, place the chopped onion and garlic to sauté in olive oil.

Add the bay leaf and the chicken stock.

As soon as it is browning, add the wine and let it evaporate a little.

Then add the tomato pulp, the coriander and the carrot cut into thin slices, the potato cut into cubes.

Let it be just a little.

Add the chunk of the rooster and cover it with boiling water.

Season with salt, pepper, chilli and paprika.

Close the pressure cooker tightly. When you start beeping, count 10 minutes
Open the pan and add the peas. Let it cook another 10 minutes and simmer to check

  • piripiri (hot sauce) q.s.
  • 10 potatoes
  • 200 gr of peas
